		<description>To my understanding the multi clad has a layer of copper or other highly conductive core that runs up the sides to allow the pan and it&#039;s contents to heat faster and more evenly.  Regular pans have layers only at the bottom if at all so the heat is not conducted up the sides as well&#92;quickly.  I have a nice set of basic All Clad pots and pans and they work very well.&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;</description>
